Paleo GREEN Bread

Ingredients:

  • 1 Tbl Apple Cider Vinegar

  • 1 tsp Baking Soda

  • 3 eggs

  • 1/2 cup Tahini

  • 1/2 Sunflower Butter

  • 1/2 cup cooked quinoa

  • 2 scoops @furtherfood Collagen

  • 1/2 lemon juice

  • 2 Tbl Herbs de Provence

 

 

Directions:

 

Pre-heat your oven to 375.

 

Mix the Apple Cider Vinegar with the baking soda in a big bowl. It will fizz, don't be scared, this is normal! Next add your eggs into the same bowl. Using a hand mixer, beat the eggs for about 3-4 min until super fluffy and well-formed. Next add your tahini, sunflower butter, quinoa and the rest of the ingredients. Lightly mix together by hand or with you mixer on low, until incorporated. Pour into an oiled bread pan. 

 

 

Bake at 375 for about 30 min or until cooked through. 

 

Ok, here is the fun part.......it will turn GREEN! And that is totally normal! The chlorogenic acid (chlorophyll) in sunflower seeds reacts with the baking soda/powder when baked, causing the green color when the bread cools. You can check it out here if are worried, but I promise this just makes it even more festive! 

 

 It is amazing plain with just a little almond butter, or make it into a sandwhich! 

 

 Although I have not yet tried it yet, you could probably use Almond Butter instead of Sunflower! You can also sub the Quinoa for shredded zucchini, which I have done :)
